Ceremonial-grade Organic Matcha is the highest-quality green tea powder available. This grade is vibrant green in color, with a very delicate taste and extremely fine texture. Ceremonial matcha organic is made from the youngest and the best tea leaves, with the stems and veins entirely removed. The leaves are stone-ground, which makes the matcha suitable for a thick-style tea. Thanks to its bright green color, it can easily be recognized from the other tea grades. We manufacture it using only raw materials obtained JAS certification of organic cultivation.


CULINARY GRADE


Culinary grade Organic Matcha is ideal for everyday consumption, from a morning latte to an afternoon matcha smoothie. Classic matcha organic is made from the youngest and the better tea leaves, with the stems and veins entirely removed. Compared to ceremony matcha organic, classic matcha organic is a very good blend at a slightly lower price. This makes it an excellent choice for everyday use.

HOW TO USE



TRADITIONAL MATCHA TEA   (CEREMONIAL) 

Begin by sifting the matcha—for the best texture and flavor, always sift the matcha. Using a tea scoop, add about 1 teaspoon of matcha to the tea bowl. Bring the water to a boil. Allow to cool to 165°F. 2 oz of water should be poured over the matcha. Remove the whisk from the warm water. Whip vigorously with the wrist, hovering just above the bottom of the matcha bowl, using a back-and-forth motion in the shape of the letter M, until the tea is sufficiently aerated and a fine, creamy foam forms on the surface, approximately 15–25 seconds. Remove larger bubbles and smooth the surface with a whisk.





MATCHA LATTE (CULINARY
 Sift the matcha powder into a mug. Bring the water to 165 before pouring it over the matcha powder. Using a matcha whisk, completely dissolve the matcha. Add the optional honey and vanilla bean paste and whisk until incorporated. Heat the milk and cream to 165 °F. Froth the milk or cream. Pour over the dissolved matcha.




BAKING (CULINARY)
 Sift in 1 to 2 tablespoons of matcha powder to your flour mixture before blending in the wet ingredients. Matcha powder can be added to pie crust, cookie dough, cake batter, granola, frosting, glazes and garnishes, pudding, ice cream, and many other recipes.
